Paximadia -- Greek Sweet Almond Biscuits
Ingredients
3/4 cup butter
3/4 cup sugar
3 beaten eggs
1/2 cup chopped almonds
21/2 cups flour
1/2 Tbl baking powder
1 tsp baking soda
1 Tbl salad oil
Method
Cream butter and add in sugar gradually. Beat in the beaten
eggs and the nuts. Sift the dry ingredients together and
mix into butter mixture gradually. Add salad oil. Pat into
3 loaves about 1 inch thick and 3 inches wide. Place loaves
on baking sheet and bake for 30 minutes in a 350o oven.
Remove from oven and slice diagonally (like you would slice
French bread). Turn slices on their sides and bake for
another 30 minutes. Be careful to watch browning at end of
baking; the biscuits change color very quickly at the end
and are not good if burnt at all. Biscuits improve with
some aging. Yields 4-6 dozen biscuits.
