Just saw a re-run of a Julia Child show locally which covered tripe and a recipe which involved layering it with vegetables and pork fat and pigs knuckles (i seem to recall) and baking it for many hours in a closed crock. Anything would be good cooked like that... Anyway, check "From Julia Child's Kitchen" or her succeeding cookbook for the recipe; it should be in there. Regards, Will
