In response to the request for the chicken barbeque recipe - here it is. I
can't wait to try the chocolate roll.
Chicken Barbeque
ingredients:
8 oz cooked chhicken, shredded
1 C tomato puree
2 T ketchup
1 T dehydrated onion flakes
1 stalk celery, diced
1 1/2 T Worcestershire sauce
2 T vinegar
2 t lemon juice
2 t prepared mustard
1 T granulated brown sugar sub.
Dash of hot sauce
1/4 C water
2 slices toast (optional)
Combine all ingredients (except bread)
in a medium saucepan. Bring to a boil,
lower heat, cover and simmer for 1/2
hour stirring occasionally. Serve over
toast if desired. Makes two servings.
Each serving counts as:
4 oz chicken
1 serving bonus
1 1/2 serving something extra
1/8 serving vegetable
(1 serving bread)
Notes:
I used boneless breast of chicken
for ease of preparation, which may be
a waster - but it tasted good. I just
skinned and boiled the chicken for about
10-15 minutes. Less chicken cooking time
is probably OK since it will simmer so
long anyway.
