1 lb. lean pork 1 lb. onions 2 tablespoons oil 2 cups dashi or chicken stock 2 tablespoons soy sauce 2 teaspoons sugar 1 teaspoon salt 1 tablespoon sake 1/4 teaspoon monosodium glutamate 1/4 teaspoon pepper 1 tablespoon flour 1/2 cup green peas Slice the pork into six cutlets. Chop the onions roughly, or slice into rings. Heat the oil in a frying pan, add the pork and onions and fry over a hot fire until they begin to brown. Add the stock, soy sauce, sugar, sake, pepper, and monosodium glutamate. Bring to the boil, lower the heat and simmer for fifteen minutes. Dissolve the cornflour in a little cold water and add to the stew, boiling until the sauce thickens slightly. Add the green peas and cook for a moment or two longer. Remove to a serving dish and serve with hot boiled rice.
