A stuffing I have used successfully for both fish and fowl consists of assorted dry fruits. Apricot, peach, and pear are good, and raisins and currants can bring the bulk up without too much cost. Fresh apple and orange slices can be included. No exact quantities, it depends too much on what you're stuffing, and what the various fruits cost. Avoid strongly flavored fruits like prunes (unless they really appeal to you). Some spices (cinnamon, cloves, ginger, galingale, anise, ...) can be used with a fruit stuffing, but none are really needed. For fowl, an orange or honey glaze goes well with the fruit stuffing (brush on orange juice concetrate or honey five minutes before removing from oven). I find bread stuffings rather dull--does anyone have any other non-bread stuffings? Kevin Karplus
