[net.cooks] crepes

I have been piping recipies from this newsgroup to my wife for a couple of
months now, and my wife has asked if she could perhaps submit the following.

Crepes.

	1/2 cup all purpose flour
	1 teaspoon sugar
	1/4 teaspoon baking powder
	1/4 teaspoon salt
	2/3 cup milk
	1 egg
	1/4 teaspoon vanilla
	2 teaspoon butter or margerine, melted

Beat all ingredients with rotary beater until smooth. For each crepe,
lightly butter 8-inch skillet; heat over medium heat until butter is
bubbly. Pour scant 1/4 cup batter into skillet; immediately rotate pan
until batter covers bottom. Cook until light brown; turn and brown other
side. Stack crepes so first-baked side is down. Cool, keeping crepes covered
to prevent them from drying out.
4 to 6 crepes.

[To recommend this recipe I can say that my wife is a straight disaster with
pancakes, but she does one good crepe after another with this recipe.]

We have tried fun fillings like peaches and whipcream for the crepes.
Does anyone have some fillings without cheese for us?

Also a good potato salad recipe would be much appreciated.

Here's a hint to help you get better crepes:  Let the batter sit for
an hour or so before making the crepes.  This allows the gluten to 
do its thing with the milk and stuff before you hit it with the hot pan.
It works for me....
