I don't like bread stuffings either. For fowl, I like to make a rice stuffing. I mix cooked rice with sauteed vegetables (onions, celery, carrots, etc), which are chopped into 1/4" pieces. I also add ham or pork or chinese sausage (lop cheung) if I have it around. Sometimes I use white rice, or brown, or wild rice. It comes out sort of like fried rice, with a nice flavor from the chicken juices.
