Here's a good recipe for Sauerkraut soup.  A girl in our office gave it to me.
My family tried it and liked it.  Its a lot of work but well worth the effort.

SAUERKRAUT SOUP


1    large can sauerkraut
4    medium potatoes
1/4  cup green split peas
1/4  cup salt pork (cut in small pieces)
1    medium pkg. of pork spare ribs (country style)

Brown spare ribs in pan and simmer for 1 hour.  Cover sauerkraut with water and                                      
bring to a boil, drain, rinse, and cover with water again and bring to a boil.
Boil potatoes until done and drain.  Mash with a fork and add to sauerkraut.  
Cover split peas with water and bring to a boil.  Cover and let stand for 1 hour
then add a little water and bring to a boil.  Cook for 3 minutes, then add to
sauerkraut mixture.  Brown the pieces of salt pork until crispy.  When its 
done, put it in a small dish and mash with a fork, then add to sauerkraut 
mixture.  Gradually add flour to drippings from the salt pork and heat until it
thickens.  Add to sauerkraut mixture along with salt and pepper to taste.

Cut the meat from the bones of the spareribs and remove any fat.  Cut up into 
chunks and add to the soup mix.
