This is a recipe my mom has made for years. It's something like a fruit cake, but more nuts and not so many candied whatevers; I like it better. Yule Cake Ingredients: 3 cups Walnuts or pecans; and some shelled whole brazil nuts 1/2 cup Pitted dates 1/2 cup seedless raisins 1 jar maraschino cherries--drained 3/4 cup sifted all-purpose flour 3/4 cup sugar 1/2 tsp. salt 1/2 tsp. baking powder 3 eggs 1 tsp. vanilla Method: Place fruit and nuts in large bowl. Measure dry ingredients and sift together over fruit and nut mix. Shake to coat. Beat eggs until light and fluffy. Add vanilla and blend in fruit mix. Let stand a little while before putting in greased loaf pan. Bake at 300 degrees Fahrenheit for about 2 hours. If you use glass or regular loaf pan, grease sides and bottom and line with greased waxed paper.
