[net.cooks] Pineapple-Cheese Mini Cakes

Keep ingredients at room temperature at least one hour.

DOUGH:

	1/4 lb. butter or margarine
	1 - 3 oz. pkg. cream cheese
	1 cup unsifted flour

Mix all 3 ingredients together.  Form into walnut-size pieces.
Press into 2 12-hole mini muffin tins, pressing up along edges.

FILLING:

	6 oz. cream cheese
	1/2 cup sugar
	1 egg
	1/2 cup drained pineapple, crushed
	1/2 tsp. vanilla

Cream sugar and cream cheese.  Add egg.  Fold in pineapple and
mix all ingredients well.  Add vanilla.  Pour filling into unbaked
shells, 3/4 full.  Bake at 400 degrees for 20 minutes.
Sprinkle with powdered sugar before serving.
