Here are some Weight Watcher pumpkin recipes I got
at class last night. I haven't tried them yet, but
thought I send them out in time for Halloween!!!


PUMPKIN-BANANA PIE

1 med sliced banana
8 oz. canned pumpkin
4 eggs
1/2 C. water
1/3 C nonfat dry milk
1 T. brown sugar sub.
1 t. cinnamon
1 t nutmeg


    Combine all in blender umtil smooth.  Pour into 9" pan sprayed with
pam.  Bake at 350 degrees for 45 min. or until firm.  Serves 2

     Equals: 4 oz. limited vegetable, 2 eggs, 4 oz. skim milk, 1 fruit.

PUMPKIN PIE

16 oz. pumpkin
1 t. salt
4 eggs(beaten)
1 t. grated lemon rind
4 t. diet margarine (melted)
1 1/2 t. pumpkin pie spice
1/4 C. brown sugar sub.

    Mix together, add 1 C. skim milk. Mix well, pour into pan and bake at
325 degrees for 1 hour.  serves 4.

    Equals: 1 limited vegetable, 1 egg, 1/4 C milk, 1/2 fat


WW PUMPKIN SUPREME

1 16oz can pumpkin
1 C skim milk
2 t. vanilla
nutmeg, cinnamon, sweetner to taste

    Mix all ingredients together. Bake in four custard cups at 350 degrees
for 25 min. Serves 4 - hot, warm, or cold.

    Equals: 4 oz. limited vegetable, 1/4 milk


PUMPKIN SQUARES

4 slices raisin bread (made into crumbs)
1 1/3 C nonfat dry milk
artificial sweetner to equal 32 t sugar (I won't use nearly THAT much)
4 t baking powder
1/2 t each cinnamon, nutmeg, dehydrated orange peel
8 oz canned pumpkin
4 medium eggs (beaten)
2 t. vanilla extract

    Preheat oven to 375 degrees. In medium bowl combine dry ingredients.
In a small bowl combine remaining ingredients; add to dry mixture and 
stir until thoroughly combined. Transfer to a 7 3/8 X 3 5/8 X 2 1/4 inch
loaf pan that has been sprayed with pam. Bake for 12 to 15 min. or until
toothpick comes out clean. Remove from pan and place on rack to cool.
Cut into 4 squares.

     Each square equals: 1 bread, 1 skim milk, 2 oz limited veg, 1 egg

PUMPKIN WHIP

1/3 C nonfat dry milk
1/4 C ice water
artificial sweetner to equal 2-3 t sugar
4 oz canned pumpkin
1/4 t each cinnamon, allspice

    Whip milk and water in an ie cold bowl; add other ingredients and 
continue to whip. Chill in refrigerater and serve cold. Serves 1.

    Equals: 1 milk, 1 limited vegetable
