In response to Kevin Karplus' request for recipes using green tomatoes-- I have made an interesting side dish out of green tomatoes. What I do is slice them and then saute the slices in a skillet, lightly filmed with butter or oil. When they soften, add wine vinegar (herbed vinegar is also interesting); use several tablespoons depending on the amount of tomato and your taste. Also season to taste with pepper and, possibly, salt. Now, let the vinegar cook down over high heat for a minute or so and serve.

I think that this dish (fried tomato slices) is traditionally made with bacon grease - the bacon flavor blends wonderfully with the tomatos. =Spencer
