I tried the recipe recently posted on net.cooks for Baklava. It works nicely, however, I made two kinds of syrup and put one on each pan, and I like the other syrup better. (Both are good, though!) Thaw 1lb Fillo dough. Grind to medium fine 1 lb Walnuts Grind to medium fine 9 or so oz of almonds. (I ate abut 1 oz in the process) add 1/2 Cup sugar to nuts, add 3/8 tsp cinnimon add 1/4 tsp cloves. Mix nut mixture well, set aside. Melt .5-.75 lb UNsalted butter. into 1 13x13 pan (or 2 14x8's or whatever) do the following 6 layers of dough alternated with brushed on butter. 1/6 of nut mix, strewn evenly. 2 layers, then butter then 1/6 of nut mix. repeat 2 layers, butter, nuts, until nuts are used up. Then... 2 layers, butter, 2 layers, butter, etc etc etc until done with dough. Cut into appropriate shapes by PUNCTURING with a knife, do not "saw" or cut like bread (try it and you will see why...) Bake in preheated oven at 350 F for 45-55 minutes (until brown, don't let the nuts burn!!!!) Let COOL IN OVEN (OVEN OFF!) UNTIL OVEN AT 150 F or so, this completes the cooking of the inside, so I'm told (it works). combine in heavy saucepan-- 1.5 C water 1.75 C sugar .875 C Clover (or other light) honey 1.5 tsp lemon juice 2 pieces cinnimon stick. Heat to boil, let boil 10 min at slow boil. Pour HOT syrup over cool Baklava. (The old greek lady that told me this was horrified at the other way around, I really didn't try the other way.) Gain weight.
