	In response to the article on Green Tomato Chutney, a few
points are in order about English recipes.  First of all, all
English recipes use Imperial measure, and one must remember that an
Imperial whatever ( gallon, tsp, Tbsp, etc. ) does not equal 1 U. S.
whatever.  The RATIO, however, of all measures is the same and as
such as long as you follow the measures given in the recipe,
everything should work out.  My little book of conversion factors
lists the gill as 1/4 of a pint.  A pint equals two cups of liquid
or 16 oz.  Therefore each gill equals 4 oz.  The recipe uses 4 1/2
gills of vinegar or 4.5 x 4 or 18 oz. and not the 20 oz. as stated
in the recipe.  Russ converted British measure to U.S. measure -
definitely a no-no.  You must use consistent units throughout a
recipe.

	I got all this information in an English book of wine
recipes that was rewritten with a forward for Americans......
