This is from Sherman Kaplan's 'In the Kitchen', for Monday, 22 November, 1982 Sweet Fried Nuts 2 c shelled raw cashews 1 c water 3 T sugar 3 T honey 5 c oil Put the nuts in a pan;cover with boiling water. Heat to boiling;reduce to simmer. Simmer for 1 minute;pour off all water. Add sugar and honey; stir till nuts are evenly coated and sugar is practically dissolved. Spread nuts out evenly on waxed paper; let dry overnite. Heat oil in wok to 375 degrees. Add nuts. Fry till sugar coats nuts in a rich brown glaze. Transfer nuts to oiled plate. Separate in a single layer to cool. Makes 6-8 servings.
