I left a dozen eggs out in my car all day yesterday until after dark, and I fear they may have been subjected to temperatures below freezing. Can eggs freeze? If so, at what temperature? What are they like after they thaw? Jim "Huevos Frios" Heliotis

According to my references (incl. "Joy of Cooking", "Settlement Cookbook", ...) eggs should not be frozen whole (if you are doing it intentionally). In that case, they should be separated, and frozen in two containers. They can be thawed at room temperature and 're-constituted' later. I have successfully used whole eggs which got cold enough to have some ice crystals in them. They were used immediately without thawing first. Good Cooking %(o) Egg-on-your FACE Dave Katz
