#N:tekcad:13800002:000:905 tekcad!johnc Jan 28 16:20:00 1983 There was a reference to bottled hot sauce a few notes ago following Louis' admonition to quit opening cans and bottles and to start cooking. Fresh hot sauce is trivial to make and is generally much better than any bottled concoction. Chop together (manually or in a blender depending on desired consistancy) Peeled yellow onions Fresh ripe tomatoes Fresh jalapeno peppers Start with equal quantities and adjust to taste. That's all there is to it. If you don't have a heavy hand, add a *small* amount of chopped Cilantro But be careful, too much cilantro can really wreck the sauce. The sauce tastes best a couple hours after you make it (flavors blend), but not as good the next day (unless you bottle and refrigerate it). Some people like to add Vinegar to taste. Add mushed avocadoes to the above mixture and you have guacamole. Sour cream is optional (I like it on top, rather than mixed in).
