While cleaning out my dresser yesterday, I ran across a pamphlet that was given to me a while ago by a person that knows that I love HOT food. The title of the pamphlet is "Sample recipes from the ALKA-2 Heartburn Cafe'". Personally, I think this is a really neat way to sell antacid tablets............ GARLIC POPCORN 1 Clove Garlic - minced 4 Tbsp. butter Popcorn, salted Melt butter, add garlic and cook over low heat. Strain mixture and pour over popcorn. GOTCHA GUACAMOLE 2 Tbsp. Lemon juice 1 Small tomato, peeled and diced 3/4 Cup Minced onion 1 Large and ripe avocado 1/4 tsp. salt 1 clove garlic, minced 1/2 tsp. Chili powder several drops Tabasco Sauce 4-5 Tbsp. Mayonnaise Just sprinkle lemon juice over avocado chunks. Mash to a pulp. Add remaining ingredients, reserving half the mayonnaise. Mix thoroughly. Spread remaining mayonnaise over top to stop dicsoloration. Cover and chill. Before serving, whip in a layer of mayonnaise to make a smooth consistency. Serve with corn chips, crisp fried tortillas or spears of raw vegetables. Makes one cup. HOT LIPS CHILI 1 onion, chopped 3 Tbsp. butter 3 small cloves garlic, minced 1/2 Cup chopped celery 1 Lb. ground beef 4 tsp. chili powder 1/2 tsp. black pepper 1 tsp. salt 4 drops Tabasco Sauce 1 No. 2 1/2 can stewed tomatoes 1 1/2 Cups tomato juice 3 frankfurters, sliced thin 1 Lb. can of red kidney beans, drained and rinsed 2 Tbsp. yellow cornmeal In a 4 Qt. saucepan, saute' onion in butter until soft. Add garlic and chopped celery. Cook for 5 minutes. Add beef and brown well. In a separate bowl, mix chili powder, pepper, salt, Tabasco, stewed tomatoes and juice. Add frankfurters and tomato mixture to pan. Cook for 30 minutes; stir often. Add kidney beans. Heat through. Sprinkle corn meal over top. Stir and cook for 10 - 15 minutes. Serve hot. Serves 6.
