Well, what jfw and I do is to just store it in the fridge, as is or stuck in the package. We don't usually cover it over because, as you have probably found, Jim, it molds rather nicely like that. On the other hand, our friend Naha has said on many occassions that he just leaves it out on the counter or wherever. If you do find that your kitchen has the right environment for that, just leave it out. Ours doesn't. The fridge is not the best place, either because the Ginger may also get too cold. I have found that Ginger will get soft, not rotten, but all the juices will squash out when the Ginger is cut. I usually throw that piece out since it can be a little hard to handle and the Ginger seems to lose much of its unique flavour by that stage. If the cut edge dries out, leave it on unless it's moldy, as Ginger seals itself. -enid
