I'm making my own wheat bread now, but the first batch was too heavy and dense to suit me. I used half plain flour and half wheat flour and one pkg of yeast. To get the lightness of good sandwich bread, should I use more yeast? Does plain flour vs. bread flour make that much difference? If anyone on the net has the answers to these questions, and any good wheat bread recipes, please reply. Also, any and all hints on bread-making would be appreciated!
