I've made a good fluffy loaf of yeast bread using 1/2 whole wheat flour and 1/2 unbleached white flour. My 100% whole wheat bread comes out a little dense. I try not to get the dough very stiff. I think this helps the bread come out lighter. When I've added too much flour, and the dough is stiff, my bread comes out denser. I used to bake more, but nowadays, it's hard for me to coordinate my time schedule with baking bread. I may start baking the Cool-Rise breads again, which rise in the refrigerator. They usually don't come out as fluffy.
