Regarding raising dough in electric ovens: Generally, appliance bulbs are extremely low wattage and thus do not generate a significant amount of heat for raising dough. A suggestion to you would be to turn your electric oven on to its lowest temperature(180-200F), when it gets to temperature shut it off and wait one hour. The temperature by then should be about right for bread making. A pan of water in the oven would also help keep the bread from drying out while rising. good luck, Harvey S.Trop mhuxt!hstrop

It will only take about 20-30 seconds to get an oven to 75-80 deg, and about 10 seconds every hour or so to keep it there. It is important not to have too hot of an oven, and 95-100 deg is too hot for a controlled , moderate rise. Why guess, a cook should have a good thermometer anyway. The kind sold as microwave thermometers are the type I have seen (0-220), very fast acting (30 seconds), and accurate. They can be found by MICROTHERM for 6-8 dollars.
