Both of these recipes are from Southern Living 1981
Annual Recipes.
Easy Granola
7 3/4 c. regular oats,uncooked
1 1/4 c. flaked coconut
3/4 c. firmly packed brown sugar
1 c. wheat germ
1 c. chopped pecans
1/2 c. salted sunflower kernels
1/2 c. sesame seeds
1 1/2 t. salt
3/4 c. vegetable oil
1/3 c. water
1 1/2 t. vanilla extract
1/2-1 c. raisins
1/2-1 c. chopped daates
Combine first 8 ingredients in a large mixing bowl;set aside.
Combine oil,water, and vanilla;stir well and pour over oat
mixture. Toss gently to coat;place mixture in two 15 x10 x 1 inch
jellyroll pans. Bake at 250 degrees for 35-40 minutes, stirring
every ten minutes;cool. Stir in raisins and dates. Store granola
in air tight containers. Yield: about 14 1/2 cups.
Crunchy Granola
6 c. regular oats, uncooked
3/4 c. wheat germ
1/2 c. flaked coconut
1/3 c. sesame seeds
1/2 c. shelled sunflower seeds
1/2 c. raw peanuts
3/4 c. whole blanched almonds
1/2 c. firmly packed brown sugar
1/2 c. vegetable oil
1/2 c. honey
1 t. vanilla extract
Combine first 7 ingredients in a large bowl;mix well and set
aside.
Combine remaining ingredients in a small saucepan;place over
medium heat,stirring until mixture is thoroughly heated. Pour
over oats mixture;mix well. Spread mixture evenly into lightly
greased 15 x10 x1 inch jellyroll pan. Bake at 325 degrees for
30-40 minutes or until golden brown,stirring often. Cool;then
store in an air tight container. Yield: about 9 cups.

I've been using this "granola" recipe for years. It's VERY good
and turns out well even when I cut back on the amount of sugar.
HOMEMADE CEREAL MIX
Nutritious and tasty, uses fewer exotic ingredients than some
cereal recipes and is less expensive.
1-1/2 cups packed brown sugar
6 cups quick-cooking or old-fashioned rolled oats
1 jar (12 ounces) wheat germ
1/2 cup whole-wheat flour
1 teaspoon salt
1 cup vegetable oil
2 teaspoons valilla extract, divided
Golden raisins or other dried fruit of your choice (optional)
Dissolve sugar in 1/3 cup water in saucepan and boil 1 minute;
cool slightly. Mix thoroughly dry ingredients, except fruit,
using a very large pan or bowl. Warm oil slightly and add
1 teaspoon vanilla. Mix warm syrup and remaining vanilla.
Pour syrup and oil over dry ingredients and mix well. Put into
2 greased rather shallow baking dishes and spread evenly. Bake
in preheated 200 degree oven, stirring from time to time, for 2
hours, or until moisture and stickiness are absorbed and cereal
feels dry and is a rich golden brown. Cool, then stir in dried
fruit in whatever proportions you like. Makes about 9 cups
before adding fruit.
NOTE: Do not attempt to speed up cooking process by using a
higher temperature since cereal will burn.
