[net.cooks] What is heavy cream?

Help!  We have a fabulous recipe for chocolate mousse, but 
it calls for heavy cream.  Nobody sells heavy cream 
around here (Saskatoon), and whipping
cream just doesn't 
work.  What is heavy cream, anyway, and is there any substitute?

       Sorry, but whipping cream is the closest thing to heavy cream
that you are going to find in this country, unless you know someone
who owns some cows. I have made many different recipes that call for
heavy cream, and whipping cream works fine (it was recommended in
the recipe). Several of these efforts have been mousse's and I couldn't
be more pleased. Maybe the technique used deflated the mousse, or some-
thing else gave you the less-than-satisfactory results you mention.
Give it another try, it really should work.
