Help! We have a fabulous recipe for chocolate mousse, but it calls for heavy cream. Nobody sells heavy cream around here (Saskatoon), and whipping cream just doesn't work. What is heavy cream, anyway, and is there any substitute? Please respond by mail or on the net, thanks in advance, joanne harpo!utah!sask!firby (p.s. sorry about the bizarre formatting)

I have made many different recipes that call for heavy cream, and whipping cream works fine (it was recommended in the recipe). Several of these efforts have been mousse's and I couldn't be more pleased. Maybe the technique used deflated the mousse, or some- thing else gave you the less-than-satisfactory results you mention. Give it another try, it really should work. Louis Pengue uucp: {ucbvax,decvax,chico,pur-ee,cbosg,ihnss}!teklabs!tekcad!louisp CSnet: louisp@tek ARPAnet:louisp.tek@rand-relay
