In response to the query from Peter Benson, I have seen Ammonia added to a cookie recipe in order to get a fast rise out of the yeast and also to get an unusual texture to the cookie. The type of cookie ( I think ) was Spritz. If enough of you want it, I will post it to the net. I have not tried the recipe.......... Chuck Young at ihnp4!ihuxi!cjy
