There is a USDA publication that I believe everyone who is interested in
nutrition will want to own:  Nutritive Value of Foods, USDA Home and
Garden Bulletin Number 72.  I bought mine from the Publications Office
at Colorado State University; any Land Grant school will surely have the
same sort of office.  I use it to compute the calorie content of recipes
I use, but it also gives the vitamin and mineral content of an amazing
list of foods.  Perhaps someone knows the universal public USnail address
where this booklet can be obtained.
