This is a bean-free chili that won the Arizona chili cookoff several years ago. Roadrunner Chili Ingredients 6 lb ground beef 1.5 lb ground pork 3 qt (1 gigantic can) cooked whole tomatoes 2 medium onions, chopped 2 or more cloves garlic, chopped 1 T paprika 2 T chili powder 1 T cumino 0.5 T Savor-Salt 0.5 T black pepper 3 jalapeno peppers, split with seeds removed Method Brown beef and pork; drain off fat. Add all remaining ingredients except jalapenos. Cook for 3 hours at low temperature. Add jalapenos and cook for 1 hour more. This makes over 2 gallons of chili. If you remove jalapenos now the chili will be moderately spicy. If you cool, refrigerate, and reheat the chili before removing them, you will observe some real heat. Beyond that you're on your own. I estimate the chili to have about 310 calories per cup. Note: After splitting and seeding the jalapenos, scrub your hands with soap and water immediately before succumbing to urges to rub your eye, scratch your armpit, or, uh, . . . you get the idea.
