[net.cooks] A kahlua recipe

cas (04/09/83)

First, my thanks to Benton Holzwarth for the article on liquor
recipes - it happened to arrive just when our vax was hooked into the
net and was a wonderful way to start things off!

I have a Kahlua recipe which I think may be superior to the others
I have seen. This recipe makes one gallon of final product:

Steep 3/4 lb. coffee in 1 & 1/2 gal. hot water for 20 min.
	Drain grounds from coffee
	Add 7 cups sugar
Boil, stirring occasionally, until 1/2 gal. of liquid remains
	Let cool to room temperature
Pour into a 1 gal. container
	Add 1/2 gal. Vodka
	Add 3 tablespoons vanilla extract
Let sit for 2 to 6 months

Comments: First and most importantly, use GOOD, fresh ground
coffee (French or Viennese roast is good). The Kahlua
can only be as good as the coffee put into it, and if you are going to
go to all this trouble it only makes sense to use the best.
The quality of the vodka does not really matter as it does not add
much to the taste.
For true connoisseurs, put in 2 vanilla beans instead of vanilla
extract.
While this recipe is not as convenient as others and the lead time
is great, the result is well worth waiting for!
