One more recipe from Terry - Banana Bran Muffins 1 cup all-purpose flour 1 tsp baking powder 1 tsp baking soda 1 egg, beaten 3/4 cup low-fat milk 2 tbsp diet margarine, melted 6 packets Sweet 'N Low 1-1/2 cup 100% bran cereal 1/2 cup mashed banana 1 tbsp honey Preheat oven to 400. Spray twelve 2-1/2" muffin pan cups with nonstick coating agent. In medium size bowl, combine flour,, baking powder and baking soda. In separate bowl, bleng together egg, milk, melted margarine, and Sweet 'N Low; stir in bran cereal. Let stand 5 minutes. Mix mashed banana and honey until well combined. Add to bran mixture. Stir in flour mixture just until blended. Do not overmix. Fill muffin pan cups 2/3 full. Bake 18-20 minutes or until toothpick inserted comes out clean. Let stand 2-3 minutes.
