A cheesecake loving friend of mine tells me Lindy's cheesecake was the best, when Lindy was still around and baking it himself, the story goes that he took the recipe with him. The NY Times published a Lindy's cheesecake recipe once, but when I bake it, it's just not the same, so my friend tells me. I'm looking for a cheesecake recipe that makes a light, moist, lemon/orange tasting cheesecake, not necessarily a tall cake, more the height of an apple pie. I feel it should have some cottage cheese in it as well as cream cheese, and I' probably use my favorite graham craker walnut crust -- any ideas out there? I've tried alot of recipes - is anyone else a fan of Lindy's?
