try eating jerusalem artichokes raw as an appetizer, or julienned in a stir fry (if a child cooks on a wok, is that a "small fry stir fry?"). In terms of growing them, BEWARE!! they take over gardens. when digging them, if any teensy-tiny piece of root remains, it sends up a shoot. But they are worth growing, in that they don't need any kind of special care, and a good-sized plant can generate 3 to 4 lbs of the roots! (if you're a winemaker with a zeal for making strange wines, don't try jerusalem artichoke--my dad did and it was notably unnotable.)
