Did I here someone ask for potato soup ? This is one of our favorite soups. Quick to make too. ----------------------------------------------- Saturday Potato Cheese Soup (based on recipe in The Thrifty Cook by Nell Nichols) 2 cups cubed potatoes 1 cup water 1 tsp salt 1/8 tsp dry mustard 1 pinch pepper 4 slices bacon chopped 1/3 cup chopped onion 1 1/2 cup lowfat milk 1 cup shreaded cheddar cheese 1/2 Tbl parsley Cook potatoes in water with salt, mustard and pepper until soft; Do not drain. Mash the potatoes. Cook onions and bacon in a saucepan until bacon is browned and onion is soft. Add potato mixture to saucepan along with the cheese and milk.
