     Here are a few recipes (courtesy of my mother), for muffins and other
tasty goodies.  All of the recipes have been tried, and taste bud tested (my
mother has done the trying, and I have done the taste bud testing).  Hope you
enjoy.  If the response is good, I will have her post more to the group.

Banana Bran Muffins

1   cup white flour (optional half whole wheat)
1/2 tsp salt				1   egg
1   tsp baking powder			2   mashed bananas
1/2 tsp baking soda			1/3 cup oil
1/8 tsp nutmeg (optional)		1/4 cup molasses
2   tbsp brown sugar			1/2 cup milk with
1   cup natural bran				1/2 tsp vinegar
1/2 cup raisons

Baking Time: twenty minutes at 400 degrees
Quantity:    makes 12 large muffins.

Method:
     Mix vinegar with milk.  Mash bananas, then add oil, molasses, and
beaten egg.  Sift all dry ingredients, and then add raisons.  Make a well
in the centre of dry ingredients.  Add liquid ingredients, stirring only
enough to blend.  Bake in well-greased muffin tray at 400 degrees for 
twenty minutes.  Cool on wire rack (optional) and enjoy!


Orange Date Blender Muffins

1     medium orange			1   tsp baking soda
1/2   cup orange juice			1   tsp baking powder
1/2   cup chopped dates			1/2 tsp salt
1/2   cup butter, or margarine		1/2 tsp ground cinnamon
1     egg				3/4 cup chopped nuts
1 1/2 cups all purpose flour		3/4 cup granulated sugar

Preparation Time: ten minutes
Baking Time: fifteen minutes at 425 degrees
Quantity: makes sixteen large muffins

Method:
     Cut orange into 8 pieces and put into a blender or a food processor
fitted with a steel blade.  Add orange juice and dates.  Process until a
smooth liquid results.  Add butter and egg, and blend until smooth.  Combine
flour, sugar, soda, baking powder, salt, cinnamon, and nuts in a large bowl.
Mix well.  Add orange mixture.  Stir lightly, just until all ingredients are
moistened.  Fill well-greased, or paper-lined muffin tins, 3/4 full.  Bake
15 minutes at 425 degrees.  Remove to a wire rack to cool.


Strawberries Romanoff

8 cups fresh strawberries		pinch of salt
1/4 to 1/2 cup fine granulated sugar	1 tbsp Kirsh
3 tbsp Cointreau			1 tbsp raspberry liquer
3 tbsp white rum			2 cups vanilla ice cream
3 tbsp vodka				1 cup chilled whipping cream

Preparation Time: twenty minutes
Chilling Time: two to three hours
Quantity: eight servings

Method:
     Wash, drain and hull strawberries.  Place in a large bowl, and sprinkle
with sugar.  Combine Cointreau (or other orange flavoured liquer), rum and
vodka.  Pour over berries and mix gently.  Cover bowl tightly with plastic
wrap.  Chill two to three hours.  Whip cream and salt until stiff peaks form.
Stir in Kirsch, and raspberry liquer.  With same beater, whip softened ice
cream at low speed until smooth as whipped cream.  Combine whipped, and ice
cream.  Serve marinated berries with a topping of whipped cream mixture.
Follow with black coffee, and don't drive right after it's devoured.

It was pointed out to me that I forgot to describe whether the orange
should be sliced with its rind on, or off.  The response from my mother
was `wash the orange, and slice it into 8 pieces with the rind ON'.
