#R:alice:-207000:zinfandel:4300031:000:512 zinfandel!berry Jul 27 09:51:00 1983 Sunchokes, previously known as Jerusalem artichokes (ain't marketing wonderful) are a species of sunflower (Helianthus tubersosus) having "edible tuberous roots". They remind me of water chestnuts in texture, but they have a unique pleasant flavor. They are good additions to stir-fried dishes, and to assortments of crudites.
