As I go upstream to finish school, I thought this would be appropriate:
LOX
---
2-2+1/2 lbs Filet Salmon
8 tsp Coarse Salt
1 Tbsp Hickory Smoked Salt
2 Tbsp Sugar
Mix Dry Ingredients
Rub over salmon
Put in double plastic bag and seal with a tie
Refrigerate
Turn once per day for 5 days
Remove and dry with paper towel
Slice
