[net.cooks] not perfect cheesecake but quick

This is not the "perfect cheesecake", but it is a simple and quick one.


			Easy Cheesecake

1 lb. cream cheese
3 medium eggs
2/3 c. sugar
1/4 tsp. almond or lemon extract

Beat all of the above for 10 minutes.  Pour into a 10 inch pie pan.
Bake at 350 degrees for 25-30 minutes.  Cool at room temperature for
20 minutes.

1 c. sour cream
3 tbsp. sugar
1 tsp. vanilla extract

Mix sour cream, sugar, and vanilla together.  Pour on top of
cheesecake and back again for 10 minutes at 350 degrees.


This is a good basic start.  I like to try variations on this, such as
substituting 1 tbsp of rum for the lemon extract.  This makes a nice
rum cheesecake.
