Although I haven't yet tried this method, I heard a well-known
cook respond to someone's question about avoiding cracking of
cheesecakes:
Once the cheese mixture has been poured into
the springform pan (and before it is baked),
take a knife and swirl through the mix. (Make
little figure-8's, etc.)
She swears that since she started this, her cheesecakes haven't
cracked...
I don't know... Maybe I'll have to bake one this weekend to
check it out! (YUM!!!)
