Try it Szechuan style: stir fried with lots of garlic and "Szechuan Hot Bean Sauce" (available in Chineese groceries in a can about the size of a tuna fish can). Garnish with sesame oil and seeds. It's also best to use the small Japanese eggplants, although large American ones work, too. Don't peel the Japanese ones; the American ones can be peeled if you prefer. Ed Gould ucbvax!mtxinu!ed
