#N:uokvax:7200001:000:1152 uokvax!jab Oct 25 22:19:00 1983 I just received a recipe for a VERY GOOD potato soup from a lady at work that I think a great deal of. It's easy, requires no meat, and makes QUITE A LOT (!) i) Cut up three or four potatoes, bite-sized chunks. Put into a pot (pretty good-sized pot, I might add) and cover with water. (Be careful to only COVER the potatoes, not fill the pot.) Boil until about 3/4 done. ii) Add one can of whole tomatoes, one onion, and one can of drained string beans (save the juice.) iii)In a skillet, melt about 2-4 tablespoons of butter. (I was told "about the size of an egg", so use your imagination. Ostrich eggs don't count.) iv) Add enough flour to the butter to absorb the butter; brown the concoction (as "brown" as you can get it --- this is your flavor!) and cool it. Add the juice from the string beans. v) Add this concoction to the pot containing your vegetables and simmer for a little while longer. You'll want to salt/pepper it to taste (make that about step ii.5 and v.5). It made 1/2 of a dutch oven. (For one person, that's several meals, and big meals at that!) Jeff Bowles Lisle, IL
