Fancy Sweet Potatoes
--------------------

2 large Sweet Potatoes, boiled in their jackets and then peeled and quartered
4 large Oranges
1/4 Cup of butter
1/2 Cup Brown Sugar
Angel Flake Coconut
Marachino Cherries

Slice the tops of the oranges, and gently squeeze a Tablespoon of juice out
of each orange. Scoop the pulp out of the oranges, leaving the shell. 
Discard the pulp. Scallop the top of the orange with a knife. 

Whip together, the sweet potatoes, butter, brown sugar and orange juice.
Stuff this mixture into the orange shells, so it is mounded over the top.
Swirl the top of the mixture with a fork or knife. Top with coconut and  
marachino cherry. Place in a baking dish and bake at 350 degrees for 
35 minutes.

Homemade Cranberry Sauce
------------------------

1 Package Ocean Spray Fresh Cranberries
1 Cup Sugar
1 1/2 Cups Water

Heat water and sugar until boiling. Lower heat, and add cranberries.
Simmer 10 - 15 minutes.  Pour into a bowl and cool until room temperature.
Cover and refridgerate.  This makes the 'whole berry' version.

Sausage-Corn Bread Stuffing
---------------------------

5 cups Cornbread, crumbled and dried ( leave it out overnight )
1/2 lb bulk sausage meat (I use Jones original sausage)
3/4 C whole cranberries
1/4 cup butter
3 eggs
1 small onion, chopped
1 stalk celery, chopped
1 t pepper
1/2 t marjoram
1/2 t sage
1 T parsley

Brown sausage. Combine all ingredients together until mixed thoroughly.
The stuffing can then be stuffed into the bird, or placed into a baking dish
and covered. The baking dish version should be baked the last 45 minutes
of the turkey/chicken's cooking time (325 degrees).
