Peanut Brittle (made easy!) .sp Ingredients: .sp 1 cup granulated sugar 2 cups salted peanuts .sp Grease an 8 x 13 pan with butter. Spread peanuts in pan to about a one-inch thickness. In an iron skillet, melt sugar until it turns brown (but don't let it burn!)--to do this, keep heat at medium-high. When sugar is completely melted, pour evenly over peanuts. Let stand until cool. Break into small pieces. .sp This recipe is a great idea for the holidays when you've had just about enough of cookie baking. .sp ENJOY! .sp Karen BTL-MH
