I know of a series of cookbooks for vegetarians prepared by the Moosewood Restaurant in Ithaca,NY. The one that I have is compiled by Mollie Katzen and contains excellent recipes for soups,salads, sandwiches and main entrees and desserts. You may not find these books in mainstream bookshops but you can definitely get them at shops that cater to out of the ordinary tastes. By the way, the name of the book that I have is the Moosewood Cookbook( no surprise there! ). Happy cooking!

But Moosewood and the follow-up, "The Enchanted Broccoli Forest" use dairy products (probably many of the recipes don't, and some can be adapted), and the requester wanted "true Vegetarian" by which he meant no animal products. I don't know for sure, but The Farm, a hippie commune in Tenessee, always was a strict veggie place, soy this, and soy that, and I believe they put out a cookbook called something original like "the Farm Cookbook". Ask at your local alternative bookstore. They might have the Farm Book, which is their blurb on their way of life, which may have pointers to the other book. Forgive me if I am wrong, but I recall that the person looking for a "truly" vegetarian cookbook specified non-dairy; I have only looked through the Moosewood Cookbook, but I seem to remember many of the recipes using dairy products. Am I correct? One thing I do know for sure -- in the Philadelphia area, at least, "The Moosewood Cookbook" and "The Enchanted Broccoli Forest" are both available in your ordinary bookstore.

hmmmm.... I heartily second the endorsement of Mollie Katzen's cookbooks ``The Moosewood Cookbook'' and ``The Enchanted Broccoli Forest''. I'd rate both of them MMMMM! (the second is a bit fancier). Anna Thomas has a nice pair of cookbooks entitled ``The Vegitarian Epicure'', with the second one (II) being the best.
