More likely, the protein comes from the combination of lentils AND rice AND whole-grain breads (chapattis and the like). I'm no nutritionist, but it's generally true that few vegetable proteins are complete in themselves, so various protein sources must be combined to "complement" one another and add up to a reasonably high level of usable protein. Beans + rice + wheat in the proper proportions ought to be pretty good. Another classic combination is the beans and corn diet (frijoles y tortillas) that's kept body and soul together for many a poor Mesoamerican. I'm told that if you don't know what you're doing, following a strictly vegetarian diet can be a quick road to severe malnutrition.
