Here's a good corn muffin recipe (can be used for cornbread and sticks, too): 1 Cup corn meal 1 Cup flour 1/4 Cup sugar (optional, but good) 4 tsp. baking powder 1/2 tsp. salt 1 Cup milk 1 egg 1/4 cup vegetable shortening, melted (or oil) Combine corn meal, flour, sugar, baking powder and salt. Add milk, egg and shortening. Beat until fairly smooth, about 1 minute. Pour into greased muffin pans (each about 1/3 full) or hot well-greased corn stick pans and bake in preheated oven 425 degrees for 15 to 20 minutes. For cornbread, use greased 8 inch square pan and bake for 20-25 minutes. Yield: 1 dozen muffins or 14 corn sticks. B. Walsh
