A variation of this which is also very good is to substitute
spinach for the lettuce, and to add a layer of hard-boiled
eggs. This is one of the best salads I've ever eaten.(It is
also the most fattening!)

			Seven Layer Salad

1st:	1 - head of lettuce, broken up
2nd:	1/2 cup - chopped celery
3rd:	1/2 cup - chopped onion
4th:	1/2 cup - chopped green peppers
5th:	1 package (box) - cooked and cooled frozen peas
pour over the first 5 layers:
1 pint - mayonnaise with 1 Tbsp. sugar
6th:	10 oz. sharp cheddar cheese, grated
7th:	1/2 pound bacon, fried and crumbled

It is best made in a flat dish, such as that used for lasagne.
Although this should be enough for 6-8, I made this for a dinner the
day after Thanksgiving, and 5 people licked the dish clean!
