I would like to thank all those individuals who posted articles and sent letters in response to my inquiry. Sad to say, it seems that most "vegetarian" cookbooks rely heavily on dairy products to supply adequate protien in the diet. (I haven't found a copy of The Farm Cookbook, yet.) Thanks, Greg Muth

You might try looking at some (South) Indian cookbooks. Many of the upper-class southern Indians are strictly vegetarian. I'm not sure how much dairy they use, but many of the recipes I've seen don't have any dairy products in them. The protein comes mainly from lentils, I think. =Spencer
