[net.cooks] Fresh Mushroom Soup

Here's one you'll love if you're a mushroom fan.  Don't know
just why it's so unusually good unless it's the sour cream
and sherry.

1/2 C    butter
1 lb.    mushrooms (chopped)
2/3 C    minced onion
1 t.     lemon juice
6 T      flour
8 C      chicken broth (canned)
1 t.     salt
1/2 t.   white pepper
2 C      sour cream
2 C      half-and-half
1/2 C    dry sherry

Melt butter and saute onion and mushrooms.  Add lemon juice.
Blend in flour.  Slowly stir in chicken broth and pepper.
Stir until thickened.  Stir in sour cream, half-and-half
and sherry and heat thoroughly.
