I can recommend

	The Good Food of Szechwan
	by Robert A. Delfs

There is enough description that even the compleat novice can make
interesting stuff.  Ingredients have Chinese names next to their
English descriptions so you can take the book to a Chinese market where
no one speaks English and point.
