I think it's wrong that most of the world's population can't digest lactose after 10-12 months. I have heard that up through adolescence is OK. I have also heard (unsubstantiated) that even adults capable of digesting lactose will lose this ability if they cease lactose intake for a long period. Yogurt and kefir are pre-digested, hence OK for all ages. Goat's milk is easier to digest. The explanation I have heard for N. Europeans being able to digest milk into adulthood is that milk is readily available there because the cold climate allows it to be easily stored. Makes sense and might even be true! Glenn at Ampex
