I have just been placed on a somewhat limiting diet. I can no longer eat any grains except for polished white rice. Corn and its simple derivatives are gone too. (This means no corn meal or corn starch. Fortunately corn syrup is OK, otherwise I couldn't eat many packaged foods.) With a little practice, I have been able to find substitutes in my cooking. The real problems are in baking -- bread, crackers, desserts. I am working on recipes that use rice flour, but this is hit and miss. (I have been grinding the white rice in a coffee grinder. It has a texture similar to corn meal, which makes it difficult to use in place of wheat flour.)
